Lazy Summer Eats and Pizza

Good morning bloggersphere!

It has been one lazy start to summer for me. Lazy with workouts (I haven’t had any since Sunday), lazy with food (Am I the only one who is more hungry when I don’t workout?), and of course lazy with blogging…But I have been taking lots of pictures.

In the interest of making this post as lazy as possible I have enlisted the help of picmonkey.com to speed up this post and collage related photos of the last couple of lazy days together.

Let’s start with salads.

Salad

Let me confess, the top left is a salad on top of Annie’s White Cheddar shells mixed with tuna. My warm mac n’ cheese n’ tuna salad was delicious!

The rest were pretty standard: Spring mix, avocado, tofu, tuna, and hummus dressings. What you see is what you get.

Popscicles!

I often engage in small talk with the cutest old guy on the seventh floor about ethnic cooking and new online recipes etc. Well, he recently told me that he spends most of the summer working on perfecting popsicles and he asked if I wouldn’t mind testing some for feedback. Would I mind? Ha! I am going to have A LOT of popsicles this summer. So far I’ve tested the Arnold Palmer and Avocado flavors…delicious! Although if we are to continue this arrangement we may need to discuss sugar content, ’cause momma was bouncing off the walls last night!

Smoothies!

This carrot cake smoothie turned out extra yummy this week. It was a cup of almond milk, 1/2 a frozen banana, 2 handfuls of shredded carrots, a serving of Vega Almondilla protein powder, and a few dashes of cinnamon. :)

Pizza!

Pizza

Let me set the scene. Yesterday felt like 114 degrees outside. My apartment only has AC in my bedroom. I swore I would not eat anything for dinner that required heat. But then I got to thinking about pizza…personal pizza with chicken sausage and a wheat free crust…My mind got the better of me and before I knew it I was mixing together a chickpea pancake crust and roasting grape tomatoes. Not even the heat could keep me from my pizza dreams.

The crust was really simple. 1/2 cup chickpea flour, 1/3 cup water, and a few dashes of Italian seasoning and salt. Cook it like a pancake on both side and then add your toppings and pop it into the toaster/oven until melty. I also heated up my sausages a bit in a pan to speed up the process.

The Summer just started yesterday, but I already have a few mini plans in the works. Starting with white water rafting this Saturday! I should probably confess that I was once an anxiety ridden child who threw a panicky distraught tantrum about boarding a row boat in a small local lake. Let’s just hope my dislike of rickety flotation devices has subsided over the years.

Also in the works: Paddle boarding (I’m a sucker for torture), Bootcamp (starting July 2nd), 2 Bikram yoga deals, and a whole mess of popsicles(!).
