Subtle Signs?

I think my body is trying to tell me something. I slept over an hour past my alarm and now I have the very subtle tinges of a cold…Or a mild case of hypochondria.
 
Anyways, waking up at the time you are supposed to leave for work can put a damper on your morning routine. Ya think?
 
I had grand plans for soaking rice noodles and packing them with a nice serving of last night’s Red Curry Chicken…but instead I only had time to pour some curry (sans noodles) into a Pyrex and grab an apple.
 
With no time to fire up the Keurig, I decided to visit my old friend: the work place coffee machine. We actually had a falling out at the end of 2011 when I found some gnats in my green tea. I was gifted a Keurig in early 2012 and haven’t looked back since. Until today…

House blend with Truvia and powdered creamer (gnat free, I think). It wasn’t the worst thing, but I’m having iced coffee withdrawal.
 
Lunch was leftovers enjoyed with a generous application of sriracha sauce (happy face).

The afternoon contained an apple and more repeat handfuls of pistachios and ginger candy (no new pics, was too busy doing, you know, actual work).
 
After work, I was in the mood for a smoothie.

Goat milk yogurt, blueberries, 1/2 frozen banana, scoop of sun warrior vanilla, shredded coconut, and a scoop of TJ’s Chunky PB with Flaxseeds.
 
Then I was off to complete a medium distance run for the day. 4.65 miles, almost ran over literal ‘sitting ducks’ on the harbor, and enjoyed the personal AC unit that this weather is providing.

In keeping with my June Challenges the only option for dinner was a salad. Is it still a salad if the main ingredient is cooked?

Roasted brussel sprouts, kale, beets, chickpeas, 1/2 red pepper, and more honey mustard goat dressing.

After I took this pic I stirred everything up and dumped sprinkled nutritional yeast on top. Nutritional yeast (or nooch) is one of my favorite seasoning ingredients from my vegetarian days. It satisfies two awesome purposes. 1) Provides a mild cheesy flavor without the extra dairy and 2) provides complete protein vitamins when your meal happens to be lacking in that department.
 
It really is time for me to buckle down on my nutrition modules (and continue my progress on my Divine mint dark chocolate bar). Good night!

June Challenges

It’s Friday AND payday, soo I decided to treat myself to a special breakfast sandwich (and a homemade iced coffee unpictured).

Egg, jelly and cheese on wheat. Today’s sandwich guy really knew how to make a $4 sandwich worth every penny. Please do a double take on the size of that egg. Unreal.

I know last night I said I was sick of Mexican food and would make an effort to vary my meals better. But two very important principles played into today’s lunch. 1. I am all for the minimization of food prep when possible and 2. I am against wasting leftovers. So yesterday’s Mari Luna taco trio leftovers for lunch were unavoidable and delicious.

Towards the end of the day I made an Iced Yogi Green Tea.

After work I intended to do two things. 1. Run a quick mile around the block and 2. Go to the 6:30 yoga class. These intentions quickly came to a halt because of some of this…

So impending doom nasty weather kept me from scheduled activities and caused me to try an at home yoga series on my own. I think I may have to try this more often as it gave me the opportunity to listen to my body and decide what it needed today.

Before my practice I made a blueberry banana smoothie with this.

So Delicious Greek Style Coconut yogurt is thick, coconutty, and mild on its own. But in a smoothie is was creamtastic!

In the mix: 1/2 a frozen banana, 2-3T of frozen blueberries, the container of greek coconut, 1 scoop of Sun Warrior, and 1/2 cup of water.

I actually felt the need to bowl my uber creamy smoothie and add a dollop of TJ’s crunchy peanut butter with flax-seeds atop. I definitely have a new appreciation for all of Laura’s smoothie bowls.

At dinnertime I recognized my clear lack of green foods this week and decided that a large dinner salad was in order.

Kale, beets, orange pepper, and goat cheese. Dressing was half of EBF’s light peanut sauce recipe with 1/2T added olive oil and agave to taste. Delicious!

It’s June 1st and I ate a salad. Should I attempt Angela’s Salad a day streak in addition to my mile a day streak? I think it’s worth a shot. Isn’t the beginning of the month always so encouraging when it comes to trying new things? :)

Today’s crazy weather didn’t allow me to complete my ‘mile a day’ today, but it’s okay because tomorrow’s 6 miler can lend a mile to today’s goal. ;)

I run faster than ice cream

I run a mile faster than an ice cream cake melts in 80 degree weather. As part of my #Mileaday efforts I decided to incorporate a Baskin Robbins errand into my running goal. Oxymoron much? I had to pick up an ice cream cake for a coworkers farewell party and I figured that the time it would take me to get in the car, find parking, get back in the car and find more parking would probably be significantly greater than an attempt to accomplish things on foot. Maybe other city dwellers could agree.

So I ran down to BR looking strange with a tote bag folded in one hand (kind of reminded me of a relay baton) and then ran back looking even stranger while alternating hands with a tote bag full of ice cream cake. Maybe the prospect of melted cake made me run even faster ;) All I know is I looked pretty silly but felt so accomplished! Yay for multitasking!

Compared to my Baskin Robbins mile the rest of the day was pretty bland. I had the usual iced coffee and the chocolate chip pastry to the right. (The brownie on the left was horrible and went straight into the wastebasket. I know, how a professional catering company can mess up a brownie is beyond me.)

Lunch was last night’s Guapos leftovers. Pollo Criollo still rocks the second day.

After my BR run I drank an unattractive but delicious smoothie with almond milk, frozen blueberries and banana, a scoop of sun warrior, and a spoonful of sunflower seed butter.
I attended a super sweaty yoga class after which I snacked on cherries and kombucha while I made a zucchini onion scramble topped with goat cheese and sriracha. Mmmm…goat cheese…

The rest of the night was filled with organizing, dark chocolate, and trying to figure out how to transport this icecream cake tomorrow morning without having to search for parking (because I usually bus it). I don’t think my running shoes can help me with this one. Good night!
