I was late to work, again. I managed to throw together a salad and grab some fruit but I had to make a visit the dreaded workplace coffee maker again. Still appears to be gnat-free.
Two more days until my iced coffee cup returns home…my precious…
Lunch was a huge salad a day salad with kale, chickpeas, carrots red pepper, goat cheese, beets, and olive oil.
Lunch was enjoyed while listening to an Interview with Scott Jurek. I think the best part of Jurek’s discussion of ultramarathoning was the way he describes getting to an unconscious or meditative state on long runs where he is just putting one foot in front of the other and enjoying his surroundings. I may get glimpses of these feelings occasionally, but it seems so cool to be able to sustain this coast-mode for 20 miles or more. It almost makes me believe I might be able to run a full marathon someday.
This afternoon I continued working on my pistachio and ginger candy stash.
The ginger chews are NOT for everyone. I offered one to a coworker and she took one without looking, tossed it into her mouth, and quickly spit it out. Her words: “I should have known better than to take food from Minzoe!” (like my new nickname this week?) I continued offering the candy to various other coworkers, but news of the first victim volunteer spread fast. You would have thought I was offering liver rather than candy.
I did have one surprise snack supporter! My boss actually liked them. Said they reminded him of the ginger served with sushi, but in a surprisingly good way. I’ll take it.
After work I had an apple with TJ’s crunchy peanut butter and went outside for quick mile a day.
I thought I might go to a hot yoga class, but a library and froyo offer from my roommate was calling my name.
I had never been in a city library before so I found the high ceilings, balconies, and chandeliers really enchanting (I should probably get out more often). I especially liked this reminder of my January 2012 Euro-trip with my sister.

I didn’t intend to join in Julie’s book club this month due to my out of control Kindle purchases so far in 2012. But since I was invited to a library and the book just happened to be sitting in the shelving cart, it was fate.
The new froyo place around the corner finally opened this week!!!!!
Taro and Tart Froyo with mango and lychee bursting balls, strawberries, and peanut butter chips. It’s gonna be a tempting summer!
Dinner was some leftover curry and rice noodles from Monday night.

The problem with my daily eats is that since I shop and cook for one my meals and snacks can get repetitive and stretch out over several days. I try to make small switches to vary things up, because even I get sick of eating the same stuff day to day. #Singlepeopleproblems. One day I’ll be complaining that my husband eats everything too fast to allow me to enjoy leftovers.









I have that problem too! My coworkers are always making fun of me because I’ll make a meal one day, and then bring in the SAME leftovers for the rest of the week. Cooking for one can be difficult! But at the same time, whenever my fiance comes to visit, I never have leftovers because I’m not used to cooking for more than one person! haha.
Yes! Sometimes when I cook for my parents on the weekends I think I’m making this humongous meal and will have tons of leftovers for sure. Four people get served and there is barely anything left in the pot! lol I need to learn how to gauge my dinner guests.
