June Challenges

It’s Friday AND payday, soo I decided to treat myself to a special breakfast sandwich (and a homemade iced coffee unpictured).

Egg, jelly and cheese on wheat. Today’s sandwich guy really knew how to make a $4 sandwich worth every penny. Please do a double take on the size of that egg. Unreal.

I know last night I said I was sick of Mexican food and would make an effort to vary my meals better. But two very important principles played into today’s lunch. 1. I am all for the minimization of food prep when possible and 2. I am against wasting leftovers. So yesterday’s Mari Luna taco trio leftovers for lunch were unavoidable and delicious.

Towards the end of the day I made an Iced Yogi Green Tea.

After work I intended to do two things. 1. Run a quick mile around the block and 2. Go to the 6:30 yoga class. These intentions quickly came to a halt because of some of this…

So impending doom nasty weather kept me from scheduled activities and caused me to try an at home yoga series on my own. I think I may have to try this more often as it gave me the opportunity to listen to my body and decide what it needed today.

Before my practice I made a blueberry banana smoothie with this.

So Delicious Greek Style Coconut yogurt is thick, coconutty, and mild on its own. But in a smoothie is was creamtastic!

In the mix: 1/2 a frozen banana, 2-3T of frozen blueberries, the container of greek coconut, 1 scoop of Sun Warrior, and 1/2 cup of water.

I actually felt the need to bowl my uber creamy smoothie and add a dollop of TJ’s crunchy peanut butter with flax-seeds atop. I definitely have a new appreciation for all of Laura’s smoothie bowls.

At dinnertime I recognized my clear lack of green foods this week and decided that a large dinner salad was in order.

Kale, beets, orange pepper, and goat cheese. Dressing was half of EBF’s light peanut sauce recipe with 1/2T added olive oil and agave to taste. Delicious!

It’s June 1st and I ate a salad. Should I attempt Angela’s Salad a day streak in addition to my mile a day streak? I think it’s worth a shot. Isn’t the beginning of the month always so encouraging when it comes to trying new things? :)

Today’s crazy weather didn’t allow me to complete my ‘mile a day’ today, but it’s okay because tomorrow’s 6 miler can lend a mile to today’s goal. ;)

    That smoothie does look super creamy! I’ve been loving iced teas in my starbucks cup too!

    I havent seen So delicious greek yogurt before! Did you get it at a regular grocery store???

      I actually found it at a MOMS organic market in Rockville, MD. The chain is located in MD and VA. Although, I went to one in Jessup, MD the next week and they didn’t carry the Greek version. So if you happen to be near a MOMS call ahead ;)
